Vegetable Ramen Noodles

Ingredients
- 1 Carrot, shaved
- 1 head Bok choy, chopped
- 1/2 cup Sugar snap peas, cut on the bias
- 2 Scallions, thinly-sliced
- Sesame oil
- 1/4 cup Soy sauce
- 2 tbsp Agave
- Corn starch
- 2 Ramen noodle cakes
Instructions
- Cook the ramen noodles according to package.
- Meanwhile, heat sesame oil in a pan and saute the carrots.
- Add the peas and continue sauteeing.
- Stir in the bok choy and cook until just starting to wilt.
- Add in the say sauce, agave, water and a sprinkle of corn starch and mix gently.
- Add the drained noodles to the pan and toss to coat evenly.
- Divide into two bowls and top with chopped scallions.
