Ingredients

Turkey
  • 1 lb Lean ground turkey
  • 1 tsp Chili powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Dried oregano
  • 1/4 tsp Paprika
  • 1/4 tsp Cumin
  • 1/4 tsp Salt
Potatoes
  • 4 Medium yellow potatoes, diced
  • 1/2 Large yellow onion, diced
  • 1 Bell pepper, diced
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp Extra Virgin Olive Oil
Pico de Gallo
  • 1 Medium tomato, diced
  • 1/2 Large yellow onion, diced
  • Lime juice, to taste
  • Salt, to taste
Avocado Dressing
  • 1 Avocado
  • 1/4 cup Water
  • 1/4 tsp Garlic powder
  • 1/4 tsp Salt
  • 1 handful Cilantro

Instructions

  1. Warm olive oil in a pan over medium-heat heat. Add the potatoes, peppers and onion and cook until the potatoes are browned on all sides, 5-10 minutes. Reduce heat, cover and cook for an additional 2-3 minutes.
  2. Meanwhile, combine the pico de gallo ingredients in a bowl, adding salt and lime juice a little at a time until desired taste is achieved and set aside.
  3. Remove potatoes, peppers and onion from the skillet and spread on the bottom of a serving platter.
  4. Place the ground turkey in the same skillet and raise heat to medium-heat. Sauté, breaking up the meat into crumbles, until cooked through. Add the seasonings and combine well.
  5. Add all the dressing ingredients to a blender and process until smooth.
  6. Spread the turkey on top of the potatoes and vegetables, add the pico de gallo, then drizzle with the dressing.
