Turkey Taco Skillet

Ingredients
Turkey- 1 lb Lean ground turkey
- 1 tsp Chili powder
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Dried oregano
- 1/4 tsp Paprika
- 1/4 tsp Cumin
- 1/4 tsp Salt
- 4 Medium yellow potatoes, diced
- 1/2 Large yellow onion, diced
- 1 Bell pepper, diced
- Salt, to taste
- Black pepper, to taste
- 2 tbsp Extra Virgin Olive Oil
- 1 Medium tomato, diced
- 1/2 Large yellow onion, diced
- Lime juice, to taste
- Salt, to taste
- 1 Avocado
- 1/4 cup Water
- 1/4 tsp Garlic powder
- 1/4 tsp Salt
- 1 handful Cilantro
Instructions
- Warm olive oil in a pan over medium-heat heat. Add the potatoes, peppers and onion and cook until the potatoes are browned on all sides, 5-10 minutes. Reduce heat, cover and cook for an additional 2-3 minutes.
- Meanwhile, combine the pico de gallo ingredients in a bowl, adding salt and lime juice a little at a time until desired taste is achieved and set aside.
- Remove potatoes, peppers and onion from the skillet and spread on the bottom of a serving platter.
- Place the ground turkey in the same skillet and raise heat to medium-heat. Sauté, breaking up the meat into crumbles, until cooked through. Add the seasonings and combine well.
- Add all the dressing ingredients to a blender and process until smooth.
- Spread the turkey on top of the potatoes and vegetables, add the pico de gallo, then drizzle with the dressing.
