Strawberry Caprese Salad
- Yield: 4 servings
- Prep Time: 10 minutes
- 1 lb Fresh strawberries, quartered
- 1/2 cup Ciliegine mozzarella balls
- 1/4 cup Fresh mint and/or basil, chopped
- 2-3 tbsp Balsamic vinegar
- Salt, to taste
- Pepper, to taste
- 2 cups Fresh arugula
- Chop up the strawberries and herbs.
- Place strawberries, herbs and mozzarella in a serving bowl
- Add balsamic, salt and pepper and toss gently to coat.
- Serve over arugula.
