Slow Cooker Tzimmes

Ingredients
- 1/2 Butternut squash, cubed
- 2 Sweet potatoes, peeled and cubed
- 6 Carrots, sliced
- 2 Tart apples, peeled and sliced
- 1 cup Sweet onion, chopped
- 1 cup Dried apricots, chopped
- 1 cup Regular or golden raisins
- 1/2 cup Orange juice
- 1/4 cup Honey
- 2 tbsp Crystallized ginger, finely chopped
- 3 tsp Ground cinnamon
- 3 tsp Pumpkin pie spice
- 2 tsp Orange zest
- 1 tsp Salt
Instructions
- Whisk together the orange juice, honey, ginger, cinnamon, pie spice, orange zest and salt.
- Place the remaining ingredients in the bowl of a slow cooker.
- Pour the orange juice mixture into the slow cooker and stir to combine evenly.
- Cook on low until everything is tender, about 5 hours.
