Slow-Cooker Tzimmes

Ingredients

  • 1/2 Butternut squash, cubed
  • 2 Sweet potatoes, peeled and cubed
  • 6 Carrots, sliced
  • 2 Tart apples, peeled and sliced
  • 1 cup Sweet onion, chopped
  • 1 cup Dried apricots, chopped
  • 1 cup Regular or golden raisins
  • 1/2 cup Orange juice
  • 1/4 cup Honey
  • 2 tbsp Crystallized ginger, finely chopped
  • 3 tsp Ground cinnamon
  • 3 tsp Pumpkin pie spice
  • 2 tsp Orange zest
  • 1 tsp Salt

Instructions

  1. Whisk together the orange juice, honey, ginger, cinnamon, pie spice, orange zest and salt.
  2. Place the remaining ingredients in the bowl of a slow cooker.
  3. Pour the orange juice mixture into the slow cooker and stir to combine evenly.
  4. Cook on low until everything is tender, about 5 hours.
