Slow Cooker Loaded Potato Soup

Ingredients

  • 4 cups Potato, chopped
  • 3/4 cup Onion, chopped
  • 4 cups Chicken broth
  • 1/2 tbsp Salt
  • 1/2 tbsp Pepper
  • 4 tbsp Butter
  • 1/4 cup Flour
  • 1 1/2 cups Heavy cream
  • 1/4 cup Sour cream
  • Shredded cheese, for topping
  • Bacon, for topping
  • Chopped scallion, for topping

Instructions

  1. Place the potatoes, onions, chicken broth, salt and pepper in the slow cooker.
  2. Cook on low for 6 hours or high for 4 hours.
  3. When cooking is almost done, whisk together the butter, flour, heavy cream and sour cream.
  4. When the slow cooker finishes, stir in the thickened mix. Cover again and cook on low for another 30 minutes.
  5. Top with shredded cheese, bacon and chopped scallions.
  6. Serve immediately.
