Slow Cooker Loaded Potato Soup

Ingredients
- 4 cups Potato, chopped
- 3/4 cup Onion, chopped
- 4 cups Chicken broth
- 1/2 tbsp Salt
- 1/2 tbsp Pepper
- 4 tbsp Butter
- 1/4 cup Flour
- 1 1/2 cups Heavy cream
- 1/4 cup Sour cream
- Shredded cheese, for topping
- Bacon, for topping
- Chopped scallion, for topping
Instructions
- Place the potatoes, onions, chicken broth, salt and pepper in the slow cooker.
- Cook on low for 6 hours or high for 4 hours.
- When cooking is almost done, whisk together the butter, flour, heavy cream and sour cream.
- When the slow cooker finishes, stir in the thickened mix. Cover again and cook on low for another 30 minutes.
- Top with shredded cheese, bacon and chopped scallions.
- Serve immediately.
