Shrimp Fajitas


  • 1 small red bell pepper, seeded and thinly sliced (1 1/2 cups)
  • 1 small green bell pepper, seeded and thinly sliced (1 1/2 cups)
  • 1 small red onion, thinly sliced (1/2 cup)
  • 1 lb. large shrimp, peeled and deveined
  • 2 tbsp. fajita seasoning
  • 2 tbsp. fresh lime juice
  • 4 (6-inch) whole-wheat flour tortillas, warmed
  • Toppings (optional): salsa, sour cream, shredded Cheddar, chopped fresh cilantro


  1. Coat a large nonstick skillet with nonstick cooking spray and place over medium-high heat. Add bell peppers and onion; sauté 4 minutes. Add shrimp, fajita seasoning and lime juice; sauté 3 to 5 minutes or until shrimp turn pink.
  2. Spoon shrimp mixture evenly down the center of each tortilla. If desired, top with salsa, sour cream, Cheddar and cilantro, and serve.
