Peach Pie Cottage Cheese Bowl

Ingredients

  • Olive oil spray
  • 2 Peaches, peeled and diced
  • 1 tsp Brown sugar
  • 1/4 tsp Ground cinnamon
  • 2 cups Low fat cottage cheese
  • 2 tbs Shelled pistachios, chopped
  • Drizzle of honey, optional

Instructions

  1. Heat a small skillet over medium heat and lightly coat with oil.
  2. Add the peaches, brown sugar, and cinnamon, and stir to combine. Let cook undisturbed for 1 minute, then stir and cook for another minute. Transfer to a bowl or plate and let cool for 5 minutes.
  3. Divide the cottage cheese evenly between 2 bowls (1 cup each).
  4. Top each bowl with half the peaches and 1 tablespoon of pistachios. Drizzle with honey, if desired.
