Peach Pie Cottage Cheese Bowl

Ingredients
- Olive oil spray
- 2 Peaches, peeled and diced
- 1 tsp Brown sugar
- 1/4 tsp Ground cinnamon
- 2 cups Low fat cottage cheese
- 2 tbs Shelled pistachios, chopped
- Drizzle of honey, optional
Instructions
- Heat a small skillet over medium heat and lightly coat with oil.
- Add the peaches, brown sugar, and cinnamon, and stir to combine. Let cook undisturbed for 1 minute, then stir and cook for another minute. Transfer to a bowl or plate and let cool for 5 minutes.
- Divide the cottage cheese evenly between 2 bowls (1 cup each).
- Top each bowl with half the peaches and 1 tablespoon of pistachios. Drizzle with honey, if desired.
