Pasta with Manchego and Tomato Sauce

  • 1 lb Pasta
  • 1 Medium onion, chopped
  • 3 cloves Garlic
  • 3 tbsp Olive oil
  • 15 oz Diced tomatoes
  • 1 cup Heavy cream
  • 1 cup Manchego cheese, shredded
  • 1 tsp Salt
  • 1/8 tsp Crushed red pepper flakes
  • 1/2 tsp Dried parsley


  1. Bring a pot of water to a boil. When boiling, cook pasta according to package instructions.
  2. In a saucepan, sauté the onion in olive oil until softened and just starting to brown. Add the garlic and cook an additional 2-3 minutes.
  3. Reduce heat to low, add the tomatoes and simmer.
  4. Stir the cream and 3/4 cup of the cheese into the tomatoes and mix well. Then add the crushed pepper, parsley and salt, adjust to taste.
  5. Once the pasta is cooked, drain, add to the sauce and mix well.
  6.  Place the pasta in a serving dish and sprinkle with the remaining 1/4 cup cheese.
  7. Serve warm.
