Panettone Shortcake

Ingredients
- 1 Panettone loaf
- 16 oz Heavy cream
- 1/2 cup Powdered sugar
- 1 tsp Vanilla extract
- 1 quart Fresh berries
Instructions
- Slice panettone horizontally into 3 even layers and set aside.
- Whip the cream until soft peaks form. Add the sugar and vanilla and whip again until mixture just starts to stiffen.
- Place bottom panettone round on a serving platter. Spread on about 1/3 of the whipped cream. Add a layer with a third of the berries. Repeat layering with the remaining two panettone rounds, ending with berries on top.
