Mediterranean Pan Seared Trout

  • 1 ½ tsp Ground coriander
  • 1 tsp Sweet paprika
  • 1 tsp Garlic powder
  • 1 ½ lb Trout fillet
  • Salt
  • Black Pepper
  • All-purpose flour
  • Extra virgin olive oil
  • Lime wedges
  • Greek tzatziki for serving


  1. Mix together the coriander, paprika and garlic powder.
  2. Pat the trout fillet dry and sprinkle the salt, black pepper and mixed spices on both sides.
  3. Dip the fish in the flour, shaking to remove any excess.
  4. Heat 3 to 4 tbsp olive oil in a cast iron skillet over medium-high heat until shimmering but not smoking. Starting skin side down, sear the fillets for 3 minutes on each side, flipping very carefully.
  5. Remove the fish and place it on a plate lined with paper towel.
  6. When ready to eat, transfer the fish to a serving platter and top with a squeeze of lime juice and dollop of tzatziki.
