Jalapeno Popper Grilled Cheese

Ingredients
Jalapeno Poppers- 4 Jalapenos, sliced in half and seeded
- 4-6 oz Cream cheese
- 8 slices Bacon
- 8 slices Bread
- 2 tbsp Butter
- 8 slices Adams Farmstand Fresh Extra Sharp Cheddar Cheese
- 1–1 1/3 cups Mozzarella cheese, shredded
Instructions
- Heat your grill to 375°F.
- Cut a piece of aluminum foil the width of your grill. Fold it in half lengthwise and set it aside.
- Fill each jalapeño half with cream cheese. Wrap a slice of bacon around each stuffed jalapeño and secure with a toothpick.
- Place the folded foil on the grill under the top rack to catch any bacon drippings and prevent flare-ups. Arrange the bacon-wrapped jalapeños on the top rack.
- Close the grill lid and cook for 35-40 minutes, or until the bacon is fully cooked. Remove the jalapeño poppers from the grill and let them cool for 10 minutes.
- Butter one side of each bread slice. Lay the slices butter-side down on a cutting board.
- Place 2 slices of cheddar on 4 slices of bread. Evenly distribute the mozzarella cheese (about 1/4- 1/3 cup per sandwich) on the remaining 4 slices.
- Remove the toothpicks from the jalapeño poppers and slice each into 5-6 pieces.
- Evenly distribute the sliced jalapeño poppers onto the mozzarella-covered slices. Top each with a cheddar-covered slice to create 4 sandwiches.
- Heat a cast-iron skillet on the grill or use a griddle. Cook the sandwiches until golden brown on both sides and the cheese is melted.
