  • Print

  • 4 lbs Boneless turkey breast
  • 1 tbsp Olive oil
  • 1 tbsp Smoked paprika
  • 1 tbsp Italian seasoning
  • 1 tsp Tarragon
  • 1 tsp Salt
  • 2 tsp Pepper
  • 2 cloves Garlic, minced
  • 2 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 tbsp All-purpose flour
  • 1/2 cup Chicken broth
  • 1/2 cup Half & half

  1. Rub 1 tbsp of olive oil into the turkey breast followed by the smoked paprika, Italian seasoning, tarragon, salt and pepper and finally, the minced garlic.
  2. Turn the Instant Pot to the high sauté setting and add the oil and 2 tbsp butter. Once it reaches the correct temperature, add the turkey breast.
  3. Sear it on all sides, usually 5-8 minutes, then transfer to a plate.
  4. Add the Instant Pot’s wire rack and return the turkey to the pot.  Close the lid and set the Instant Pot to the Manual setting and set the timer to 25 minutes on high pressure.
  5. Once the Instant Pot cycle is completed, unlock and remove the lid. Transfer the turkey to a plate, wrap in aluminum foil and let sit for 10-15 minutes.

For the Gravy

  1. Leave the turkey dripping in the Instant Pot and turn to the high sauté setting.
  2. Add the butter. Once it’s melted, whisk in the flour and cook for a couple minutes, whisking constantly.
  3. Whisk in the chicken broth and half and half and cook until thickened, about 3 minutes. Using half & half makes for a creamier gravy, but it’ll also be delicious if you substitute more broth for the half & half. Season with salt and pepper to taste.
