Honey & Spice Goat Cheese Grilled Cheese

Ingredients
- 2 slices Thick white bread
- 2 oz Goat cheese, crumbled
- 2 oz White cheddar, shredded
- 2 tbsp Honey
- 3 tbs Butter, melted
- 1/8 tsp Red pepper flakes, or to taste
Instructions
- Melt the butter in a large saucepan over medium-low heat, adding the red pepper flakes as it melts. Let it cook for about 5 minutes, being careful not to let it burn.
- Carefully pour the melted butter into a small bowl and set aside. Do not wash the pan—you’ll use it to make the sandwich.
- Using a pastry brush or the back of a spoon, spread the infused butter onto one side of each slice of bread (you may not need all of the butter).
- Return the pan to medium heat. Place one slice of bread in the pan, buttered side down. Add the crumbled goat cheese and shredded cheese on top, then drizzle with 1 tbsp of honey. Place the second slice of bread on top, buttered side facing up, to form a sandwich.
- Cover the pan with a lid to help the cheese melt. Cook for 5–7 minutes, or until the bread is golden brown and toasted on both sides and the cheese is fully melted.
- Once done, drizzle the top of the sandwich with the remaining tablespoon of honey. If any red pepper flakes remained in the pan, sprinkle a few extra on top before serving.
