Ingredients
- 4 lb Top round roast
- 4 tsps Dried oregano
- 4 tsps Dried thyme
- 2 tsps Dried rosemary
- 2 tsps Coarse salt
- 1 tsp Black pepper
- 1 tsp Mustard powder
Instructions
- Preheat oven to 450°F.
- In a small bowl, combine the oregano, thyme, rosemary, salt, black pepper, and mustard powder.
- Rub the seasoning mixture evenly over the top of the roast, coating the surface well.
- Place the roast on a rack inside a shallow roasting pan.
- Place the roast in the preheated 450°F oven and roast for 15 minutes. Reduce the oven temperature to 350°F and continue roasting for approximately 50 minutes, or until the internal temperature reaches your desired doneness. For medium-rare, aim for 130–135°F before resting; 140°F will yield a more medium roast.
- Remove the roast from the oven and loosely tent with aluminum foil. Allow it to rest for 10–15 minutes before carving.
- Slice the beef thinly against the grain for the most tender results. Serve with your favorite sides.
