Ham and Egg Cups

Ingredients

  • 1lb Adams Farmstand Fresh Boiled Ham, sliced
  • 1 cup Adams Farmstand Fresh Extra Sharp Cheddar Cheese, shredded
  • 10 Large eggs
  • 1/2 cup Scallions, sliced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Set your oven to 350F and lightly coat a muffin tin with nonstick cooking spray.
  2. Place a slice of ham into each muffin cup, pressing it gently in the center to form a cup shape.
  3. Sprinkle about 1 tbsp of shredded cheddar cheese into the bottom of each ham cup.
  4. In a medium bowl, whisk the eggs together. Stir in sliced scallions and season with salt and pepper to taste.
  5. Pour a couple of tbsp of the egg mixture into each ham cup, filling them evenly.
  6. Place the muffin tin in the oven and bake for 20-25 minutes, or until the eggs are set.
  7. Remove the ham cups from the tin using a fork. Serve warm.
