Ham and Egg Cups

Ingredients
- 1lb Adams Farmstand Fresh Boiled Ham, sliced
- 1 cup Adams Farmstand Fresh Extra Sharp Cheddar Cheese, shredded
- 10 Large eggs
- 1/2 cup Scallions, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Set your oven to 350F and lightly coat a muffin tin with nonstick cooking spray.
- Place a slice of ham into each muffin cup, pressing it gently in the center to form a cup shape.
- Sprinkle about 1 tbsp of shredded cheddar cheese into the bottom of each ham cup.
- In a medium bowl, whisk the eggs together. Stir in sliced scallions and season with salt and pepper to taste.
- Pour a couple of tbsp of the egg mixture into each ham cup, filling them evenly.
- Place the muffin tin in the oven and bake for 20-25 minutes, or until the eggs are set.
- Remove the ham cups from the tin using a fork. Serve warm.
