Grilled Shrimp with Cantaloupe Lime Salsa

Ingredients

Shrimp
  • 1 lb Shrimp, shelled
  • 1 tbsp Olive oil
  • Salt, to taste
  • Ground black pepper, to taste
Cantaloupe Lime Salsa
  • 1/2 Cantaloupe, diced
  • 2 Tomatoes, diced
  • 1/4 Red onion, diced
  • 1/2 Avocado, diced
  • 1 tsp Jalapeño pepper, seeded and minced
  • 1 Lime, juiced
  • 1 Orange, zested and juiced
  • 1/4 tsp Kosher salt, or to taste
  • Ground black pepper, to taste
  • 1 handful Basil leaves, chopped

Instructions

  1. Make the salsa by combining all of the ingredients in a bowl and gently tossing to coat evenly. Adjust seasoning to taste.
  2. Pat the shrimp very dry with paper towels. Gently toss in a bowl with the olive oil, salt and pepper.
  3. Preheat grill to high heat.
  4. Place shrimp on skewers, leaving enough room so they can lie flat. Place on hot grill and cook 2-3 minutes per side.
  5. Serve immediately with salsa over rice.
