Grilled Shrimp with Cantaloupe Lime Salsa

Ingredients
Shrimp- 1 lb Shrimp, shelled
- 1 tbsp Olive oil
- Salt, to taste
- Ground black pepper, to taste
- 1/2 Cantaloupe, diced
- 2 Tomatoes, diced
- 1/4 Red onion, diced
- 1/2 Avocado, diced
- 1 tsp Jalapeño pepper, seeded and minced
- 1 Lime, juiced
- 1 Orange, zested and juiced
- 1/4 tsp Kosher salt, or to taste
- Ground black pepper, to taste
- 1 handful Basil leaves, chopped
Instructions
- Make the salsa by combining all of the ingredients in a bowl and gently tossing to coat evenly. Adjust seasoning to taste.
- Pat the shrimp very dry with paper towels. Gently toss in a bowl with the olive oil, salt and pepper.
- Preheat grill to high heat.
- Place shrimp on skewers, leaving enough room so they can lie flat. Place on hot grill and cook 2-3 minutes per side.
- Serve immediately with salsa over rice.
