Ingredients

  • 2 cups Shucked fresh oysters, drained
  • 2 Large eggs, beaten
  • Vegetable oil, for frying
  • 1 1/2 cups Cornmeal
  • 2 tbsp All-purpose flour
  • 2 tsp Salt, more as needed
  • 1 tsp Black pepper
  • 1 tsp Sugar

Instructions

  1. Pat shucked oysters dry with a paper towel and set aside.
  2. Beat the eggs in a bowl then add the oysters and let sit for 10 minutes.
  3. Heat 3 inches of vegetable oil in a deep pan over medium-high heat until it reaches 370F.
  4. In another bowl, mix together the cornmeal, flour, salt, black pepper and sugar.
  5. One at a time, remove the oysters from the egg, letting the excess drip off. Roll in the cornmeal mix until evenly coated and set on a baking sheet. Repeat with remaining oysters.
  6. Add the oysters to the hot oil in batches, being careful to not overcrowd the pan. Fry until golden, 2-4 minutes per batch.
  7. Remove the oysters to a paper-towel-lined plate to drain. Salt lightly to taste.
  8. Serve warm.
