Fried Oysters

Ingredients
- 2 cups Shucked fresh oysters, drained
- 2 Large eggs, beaten
- Vegetable oil, for frying
- 1 1/2 cups Cornmeal
- 2 tbsp All-purpose flour
- 2 tsp Salt, more as needed
- 1 tsp Black pepper
- 1 tsp Sugar
Instructions
- Pat shucked oysters dry with a paper towel and set aside.
- Beat the eggs in a bowl then add the oysters and let sit for 10 minutes.
- Heat 3 inches of vegetable oil in a deep pan over medium-high heat until it reaches 370F.
- In another bowl, mix together the cornmeal, flour, salt, black pepper and sugar.
- One at a time, remove the oysters from the egg, letting the excess drip off. Roll in the cornmeal mix until evenly coated and set on a baking sheet. Repeat with remaining oysters.
- Add the oysters to the hot oil in batches, being careful to not overcrowd the pan. Fry until golden, 2-4 minutes per batch.
- Remove the oysters to a paper-towel-lined plate to drain. Salt lightly to taste.
- Serve warm.
