Cottage Cheese Scrambled Eggs

Ingredients
- 2 cups Baby spinach leaves
- 2 Eggs
- 1/4 cup Low-fat cottage cheese
- Salt
- Black pepper
- Oil spray
Instructions

Whisk together the eggs, cottage cheese and salt and pepper to taste.

Spray a skillet with oil spray and set it over medium-high heat. Add the spinach leaves and sauté until they wilt, 1-2 minutes.

Reduce heat to medium-low and pour the egg mixture into the pan with the spinach. Gently push sections of the eggs towards the center of the pan as they begin to set. Continue doing this until the eggs are creamy and softly scrambled.

Remove from pan and enjoy
