Blueberry Cottage Cheese Breakfast Bowl

Ingredients
- 1.5 cups Cottage cheese
- 4 Large eggs
- 1 cup Rolled old-fashioned oats
- 1 Banana
- 1/3 cup Maple syrup
- 1 tsp Baking soda
- 1 cup Blueberries
Instructions
- Preheat the oven to 350°F. Lightly coat 4 2-cup bowls with non-stick spray and set them on a large baking sheet.
- In a high-powered blender, combine the cottage cheese, eggs, oats, banana, maple syrup, and baking soda. Blend until smooth, this takes a few minutes. If the mixture seems too thick, add a splash of milk to loosen it.
- Divide the batter evenly among the bowls (they’ll be more than half full). Top with blueberries. Tip: Using frozen blueberries, or adding them around the 15-minute mark, helps keep them from sinking.
- Bake for 35–40 minutes, up to 45 depending on your oven. They’re done when the tops are golden brown, puffed up, and firm to the touch.
- Let cool for at least 10 minutes before serving.
