Bacon Wrapped Asparagus with Saffron Aioli

Ingredients
Bacon Wrapped Asparagus- 2 bunches Asparagus, washed and bottoms trimmed
- 1 package Bacon
- Black pepper
- Juice of 1/2 a lemon
- Flaky salt
- Lemon zest, for garnish
- Chives, for garnish
- 3/4 cup Mayonnaise
- pinch Saffron thread
- 1 tbs Hot water
- 1 clove Garlic, finely grated
- 1 tsp Dijon
- Salt
- Black pepper
Instructions
Bacon Wrapped Asparagus
- Wrap bunches of 3 asparagus with one piece of bacon, tucking the ends of the bacon in to keep it in place.
- Place asparagus on a sheet pan, sprinkle generously with black pepper, and roast at 400 for about 15 minutes, turning them over half way through. Roast until bacon is browned and crispy and asparagus is tender. Allow to cool on a wire rack or paper towel lined plate to drain excess fat.
- Plate and finish with a big squeeze of lemon, lemon zest, chives, and flaky salt. Serve with saffron aioli for dipping.
Saffron Aioli
- Put the saffron in the hot water and let sit for 3-5 minutes until it’s a deep golden color.
- Mix mayo, garlic, Dijon, and saffron water together. Season with salt and pepper.
- Let it chill in the fridge for at least 10-15 minutes before serving.
