Asian Pork Casserole

Ingredients

  • 1 tsp Coconut oil
  • 1 Star anise
  • 2 Onions, sliced
  • 1 1/2 tbsp Garlic, pressed
  • 1 1/2 tbsp Ginger, pressed
  • 1 tbsp Sriracha chilli flakes
  • 2 lbs Pork butt, chopped
  • 1 tbsp Soy sauce
  • 2 tbsp Fish sauce
  • 10 grinds Black pepper mill
  • 1 1/2 cup Stock
  • 1 tbsp Corn flour
  • 1 tsp Honey

Instructions

  1. Heat the coconut oil in a frying pan over medium heat.
  2. Add the garlic, ginger, onion and star anise and cook until the onions start to turn translucent, 3-5 minutes. Remove the star anise.
  3. Place the cooked vegetables in a slow cooker with the pork, pepper flakes, soy sauce, fish sauce, stock, corn flour and honey. Stir to combine well.
  4. Cover and cook on low for around 8 hours.
