Asian Pork Casserole

Ingredients
- 1 tsp Coconut oil
- 1 Star anise
- 2 Onions, sliced
- 1 1/2 tbsp Garlic, pressed
- 1 1/2 tbsp Ginger, pressed
- 1 tbsp Sriracha chilli flakes
- 2 lbs Pork butt, chopped
- 1 tbsp Soy sauce
- 2 tbsp Fish sauce
- 10 grinds Black pepper mill
- 1 1/2 cup Stock
- 1 tbsp Corn flour
- 1 tsp Honey
Instructions
- Heat the coconut oil in a frying pan over medium heat.
- Add the garlic, ginger, onion and star anise and cook until the onions start to turn translucent, 3-5 minutes. Remove the star anise.
- Place the cooked vegetables in a slow cooker with the pork, pepper flakes, soy sauce, fish sauce, stock, corn flour and honey. Stir to combine well.
- Cover and cook on low for around 8 hours.
