- 1/2 cup Honey
- 2 tsp Red pepper flakes
- 1/2 tbsp Apple cider vinegar
- 1 clove Garlic, sliced
- 1.5 lbs Boneless skinless chicken breast, cut into bite-sized pieces
- 4 cups Corn flakes
- 1/4 cup All-purpose flour
- 2 1/2 tsp Garlic powder
- 2 1/2 tsp Coarse salt
- 1 tsp Black pepper
- 1 1/2 tsp Ground mustard
- 1 1/2 tsp Paprika
- 3 Eggs
- 1 tbsp Water
- 3-4 tbsp Olive oil
Instructions
- Place the honey, red pepper flakes, apple cider vinegar and sliced garlic in a small saucepan over medium-high heat. Bring to a gentle boil, then pour into a bowl and set aside to cool.
- Preheat air fryer to 375F.
- Place the corn flakes, flour, garlic powder, salt, pepper, ground mustard and paprika in a food processor and pulse until it is the consistency of breadcrumbs. Pour into a bowl.
- In a separate bowl, whisk together the eggs and water.
- Dip a piece of chicken in the egg mixture, shake off excess then coat in the cornflake mixture. Dip the same piece in the egg and then cornflakes again. Place on a baking sheet. Repeat with remaining chicken pieces.
- Spray the air fryer basket with cooking spray. Place as many chicken pieces in the basket as possible without overcrowding.
- Drizzle 1 tbsp of oil over the chicken and cook for 4 minutes. Flip, and cook for another 4 minutes, or until golden brown. Place in a large bowl. Repeat with the remaining chicken.
- Drizzle about a 1/2 cup of the hot honey over the chicken and gently toss until evenly coated. Add more or less to taste.
- Serve immediately.
