Ingredients

  • 1/2 cup Honey
  • 2 tsp Red pepper flakes
  • 1/2 tbsp Apple cider vinegar
  • 1 clove Garlic, sliced
  • 1.5 lbs Boneless skinless chicken breast, cut into bite-sized pieces
  • 4 cups Corn flakes
  • 1/4 cup All-purpose flour
  • 2 1/2 tsp Garlic powder
  • 2 1/2 tsp Coarse salt
  • 1 tsp Black pepper
  • 1 1/2 tsp Ground mustard
  • 1 1/2 tsp Paprika
  • 3 Eggs
  • 1 tbsp Water
  • 3-4 tbsp Olive oil

Instructions

  1. Place the honey, red pepper flakes, apple cider vinegar and sliced garlic in a small saucepan over medium-high heat. Bring to a gentle boil, then pour into a bowl and set aside to cool.
  2. Preheat air fryer to 375F.
  3. Place the corn flakes, flour, garlic powder, salt, pepper, ground mustard and paprika in a food processor and pulse until it is the consistency of breadcrumbs. Pour into a bowl.
  4. In a separate bowl, whisk together the eggs and water.
  5. Dip a piece of chicken in the egg mixture, shake off excess then coat in the cornflake mixture. Dip the same piece in the egg and then cornflakes again. Place on a baking sheet. Repeat with remaining chicken pieces.
  6. Spray the air fryer basket with cooking spray. Place as many chicken pieces in the basket as possible without overcrowding.
  7. Drizzle 1 tbsp of oil over the chicken and cook for 4 minutes. Flip, and cook for another 4 minutes, or until golden brown. Place in a large bowl. Repeat with the remaining chicken.
  8. Drizzle about a 1/2 cup of the hot honey over the chicken and gently toss until evenly coated. Add more or less to taste.
  9. Serve immediately.
