3 Easy Grilled Appetizers

Ingredients
Mortadella and Salami Skewers- 1/4 lb mortadella, thinly sliced
- 1/4 lb salami, thinly sliced
- Pickled peppers
- 1 Tablespoon honey
- 1 Tablespoon red wine vinegar
- 1 lb beef tenderloin or filet mignon
- 1 bunch scallion, cut into 1 inch pieces
- Salt
- Black pepper
- 1/2 cup tamari
- 1 lb yellow peaches
- 1/2 lb prosciutto
- Calabrian chili paste
Instructions
Mortadella and Salami Skewers
- Soak skewers in water for at least 30 minutes before grilling.
- Prepare grill for medium-high heat. Fold each piece of mortadella and salami in half, then in half again, until they’re in 2-inch stacks.
- Thread onto skewers, alternating mortadella and salami. Add one pickled pepper to the top of each skewer.
- Whisk honey and red wine vinegar together in a small bowl.
- Place skewers on the grill and rotate until all sides are charred and crispy, about 1 minute per side, brushing with the honey mixture as you go.
- Remove from heat once all sides are crispy and serve.
Steak and Scallion Skewers
- Soak skewers in water for at least 30 minutes before grilling.
- Prepare grill and set to high heat.
- Cut beef into 2-inch cubes and thread onto skewers, alternating with pieces of scallion.
- Season skewers with salt and pepper.
- Grill, brushing with tamari on all sides and rotating, until all sides have grill marks, about 1-2 minutes per side.
- Remove from grill and serve.
Prosciutto Wrapped Peaches with Calabrian Chili Paste
- Prepare grill and set to medium-high heat.
- Cut peaches into wedges and wrap each wedge with 1/2 to 1 piece of prosciutto.
- Place peaches on the grill and brush with chili paste.
- Flip when the prosciutto is crispy and sizzling, about 2-3 minutes, then grill until the second side is also crispy and sizzling and the peach is soft.
