Ingredients

  • 1.5 cups Cottage cheese
  • 4 Large eggs
  • 1 cup Rolled old-fashioned oats
  • 1 Banana
  • 1/3 cup Maple syrup
  • 1 tsp Baking soda
  • 1 cup Blueberries

Instructions

  1. Preheat the oven to 350°F. Lightly coat 4 2-cup bowls with non-stick spray and set them on a large baking sheet.
  2. In a high-powered blender, combine the cottage cheese, eggs, oats, banana, maple syrup, and baking soda. Blend until smooth, this takes a few minutes. If the mixture seems too thick, add a splash of milk to loosen it.
  3. Divide the batter evenly among the bowls (they’ll be more than half full). Top with blueberries. Tip: Using frozen blueberries, or adding them around the 15-minute mark, helps keep them from sinking.
  4. Bake for 35–40 minutes, up to 45 depending on your oven. They’re done when the tops are golden brown, puffed up, and firm to the touch.
  5. Let cool for at least 10 minutes before serving.
