High Protein Breakfast Sandwich

Ingredients

  • 1 Egg
  • 2 tbs Cottage cheese
  • 1 English Muffin, toasted
  • 1 tbs Cheddar cheese, grated
  • 1–2 slices Bacon
  • 1 tsp Pepper jelly
  • 1 tbs Whipped cream cheese
  • Salt
  • Black Pepper

Instructions

  1. Whisk together eggs, cottage cheese and salt and pepper to taste. Microwave for 90 seconds. If the inside is still too soft, microwave for another 30 seconds.
  2. Place the cheese and bacon on one side of the English Muffin and top with the eggs.
  3. Top with the pepper jelly and whipped cream cheese.
  4. Add the top to the sandwich and enjoy
