High Protein Breakfast Sandwich

Ingredients
- 1 Egg
- 2 tbs Cottage cheese
- 1 English Muffin, toasted
- 1 tbs Cheddar cheese, grated
- 1–2 slices Bacon
- 1 tsp Pepper jelly
- 1 tbs Whipped cream cheese
- Salt
- Black Pepper
Instructions
- Whisk together eggs, cottage cheese and salt and pepper to taste. Microwave for 90 seconds. If the inside is still too soft, microwave for another 30 seconds.
- Place the cheese and bacon on one side of the English Muffin and top with the eggs.
- Top with the pepper jelly and whipped cream cheese.
- Add the top to the sandwich and enjoy
