Burrata with Tomato and Fig

Ingredients
- 2 tbsp Olive oil
- 1 Shallot, minced
- 2 cloves Garlic, minced
- 2 tsp Fresh thyme
- 2 cups Cherry tomatoes, halved
- 1/2 cup Dried figs, quartered
- 1/2 tsp Kosher salt
- 1/2 tsp Black pepper
- 1/4 cup Balsamic vinegar
- 16 oz Burrata cheese
- Fresh basil, coarsely chopped
- 1 Baguette, sliced
Instructions
- Heat the olive oil in a skillet over medium-high heat.
- Saute the shallot for 4-5 minutes. Add the garlic and thyme, and saute for another minute.
- Add in the tomatoes, figs, salt and pepper, cover and saute for 10-12 minutes undisturbed.
- Stir in the balsamic vinegar, then stir, reduce heat to medium and continue to cook until excess liquid has cooked off, stirring occasionally.
- Remove the skillet from the heat and let rest for 8-10 minutes to cool slightly.
- Place burrata on a plate and spoon the tomato and fig mixture on top of it, then garnish chopped basil and kosher salt to taste.
- Serve with toasted baguette.
