Walnut Tacos

Ingredients

  • 2 1/4 cups Walnut halves
  • 2 tsp Ground cumin
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 3 tsp Cider vinegar
  • 1 tsp Reduced-sodium tamari
  • 15 oz can No-salt-added black beans, rinsed
  • 2 cups Iceberg lettuce, shredded
  • 1 cup Tomato, diced
  • 1/2 cup Onion, diced
  • 1/2 cup Salsa
  • 8 Corn tortillas, warmed
  • 4 tbsp Vegan sour cream

Instructions

  1. Place walnuts in a food processor or blender and pulse until finely chopped, but not ground.
  2. Add the cumin, garlic powder, onion powder, paprika and salt and pulse just until blended.
  3. Transfer mixture to a large skillet over medium heat and toast until heated through and fragrant, about 5 minutes. Add vinegar to taste and tamari and mix well.
  4. Serve the walnut mixture in tortillas with the beans, lettuce, tomato, onion, salsa and sour cream.
