Raspberry White Hot Chocolate

Ingredients
- 3/4 cup Raspberries
- 2-3 tbsp Granulated sugar
- 1 1/2 cups Milk
- 1/2 cup Heavy whipping cream
- 1 tsp Cornstarch
- 2 oz White chocolate, finely chopped
- Pinch of salt
- Whipped cream, optional
- Marshmallows, optional
Instructions
- Mash together the raspberries and sugar, more or less depending on how sweet you like things. Set aside.
- In a pot, whisk together the milk, cream and cornstarch and place on medium-low heat. Heat until milk just starts simmering, careful not to let it boil. Remove from heat.
- Strain the raspberries through a sieve to remove the seeds. Pour into the milk.
- Add the white chocolate and salt and stir until all the chocolate is melted and well combined.
- Pour into two mugs and top with whipped cream and marshmallows if using.
