Pumpkin Oat Bars

Ingredients
- 1 cup White whole wheat flour
- 1 cup Quick cooking oats
- 2 tsp Pumpkin spice
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1/2 cup Pumpkin puree
- 1/2 cup Coconut oil, melted
- 1/2 cup Brown sugar
- 2 Eggs, whisked
- 1 tsp Vanilla extract
- 1/2 cup Chocolate chips
Instructions
- Preheat oven to 350F.
- Grease an 8×8 inch baking pan with cooking spray or line with parchment paper.
- Mix together flour, oats, pumpkin spice, baking soda and salt.
- In a separate bowl beat together the pumpkin, coconut oil, brown sugar, eggs and vanilla.
- Add the dry ingredients into wet and stir well. Then stir in the chocolate chips.
- Pour batter into the prepared pan and spread it evenly.
- Bake for 16-18 minutes.
- Let cool before cutting.
