Pumpkin Oat Bars

Ingredients

  • 1 cup White whole wheat flour
  • 1 cup Quick cooking oats
  • 2 tsp Pumpkin spice
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 cup Pumpkin puree
  • 1/2 cup Coconut oil, melted
  • 1/2 cup Brown sugar
  • 2 Eggs, whisked
  • 1 tsp Vanilla extract
  • 1/2 cup Chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. Grease an 8×8 inch baking pan with cooking spray or line with parchment paper.
  3. Mix together flour, oats, pumpkin spice, baking soda and salt.
  4. In a separate bowl beat together the pumpkin, coconut oil, brown sugar, eggs and vanilla.
  5. Add the dry ingredients into wet and stir well. Then stir in the chocolate chips.
  6. Pour batter into the prepared pan and spread it evenly.
  7. Bake for 16-18 minutes.
  8. Let cool before cutting.
