Irish Honey Mustard Chicken

  • 1/4 cup Honey
  • 1 tbsp Coarse-ground mustard
  • 1/2 tbsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Butter, divided
  • 1 lb Boneless skinless chicken breasts
  • 1 lb Small red potatoes, quartered
  • 3 Carrots, cut into 3/4-inch chunks
  • 1 Onion, cut into 1-inch wedges


  1. Combine honey, mustard, salt and pepper in a bowl and set aside.
  2. Melt 1 tbsp butter in large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 4 minutes each side. Transfer to a plate.
  3. Melt remaining 1 tbsp butter in the same skillet. Add vegetables and cook until lightly browned, about 6-8 minutes.
  4. Place chicken on top of the vegetables and evenly pour the honey mixture over them.
  5. Cover, reduce heat to low and cook for 10-12 minutes, stirring the vegetables once, until vegetables are tender and chicken is cooked through.
