Grilled Pollock Tacos

Ingredients
- Oil
- 1 lb Pollock
- 1 tbsp Chili powder
- 1 tbsp Cumin
- 1/2 tbsp Mexican Oregano
- 1/2 tbsp Paprika
- 1/2 tbsp Garlic powder
- 1/2 tbsp Onion Powder
- Salt, to taste
- Pepper, to taste
- 16 Corn tortillas
Instructions
- Mix spices in a small bowl.
- Oil a frying pan and heat over medium-high heat.
- Stack 2 corn tortillas in the pan and fry until golden on both sides. Repeat with the remaining tortillas and store them under a clean dish towel to keep warm.
- Add more oil to frying pan and add the pollock. Pour spice mix over the fish and toss until all sides are evenly coated.
- Fry for 4-5 minutes, flaking the fish as it cooks, until all pieces are cooked through. It should read 145°F . Transfer to a serving dish.
- Assemble your tacos using additional toppings such as guacamole, cabbage slaw, queso fresco, pico de gallo or pickled red onion.
