Grilled Pollock Tacos

Ingredients

  • Oil
  • 1 lb Pollock
  • 1 tbsp Chili powder
  • 1 tbsp Cumin
  • 1/2 tbsp Mexican Oregano
  • 1/2 tbsp Paprika
  • 1/2 tbsp Garlic powder
  • 1/2 tbsp Onion Powder
  • Salt, to taste
  • Pepper, to taste
  • 16 Corn tortillas

Instructions

  1. Mix spices in a small bowl.
  2. Oil a frying pan and heat over medium-high heat.
  3. Stack 2 corn tortillas in the pan and fry until golden on both sides. Repeat with the remaining tortillas and store them under a clean dish towel to keep warm.
  4. Add more oil to frying pan and add the pollock. Pour spice mix over the fish and toss until all sides are evenly coated.
  5. Fry for 4-5 minutes, flaking the fish as it cooks, until all pieces are cooked through. It should read 145°F . Transfer to a serving dish.
  6. Assemble your tacos using additional toppings such as guacamole, cabbage slaw, queso fresco, pico de gallo or  pickled red onion.
