- 1 tsp Curry powder
- 1 tsp Brown sugar
- 1/2 tsp Lime zest
- 1/8 tsp Crushed red pepper flakes
- 4 (4 oz) Salmon fillets
- 1 tsp Fresh lime juice
- Preheat oven to 450°F.
- In a small bowl combine curry powder, brown sugar, lime zest and red pepper flakes. Rub evenly over tops of fillets and place, seasoned side up, in a shallow baking dish.
- Bake 10 minutes or until fish flakes easily with a fork.
- Transfer fillets to a serving platter, drizzle with lime juice, and serve.
Simple and delicious
I double the amount of rub and leave it to marinade for a while. I substitute chilli flakes for the red pepper, as we like our food quite spicy. This is a simple but superb recipe.
