- 1 tsp. curry powder
- 1 tsp. brown sugar
- 1/2 tsp. lime zest
- 1/8 tsp. crushed red pepper flakes
- 4 (4-oz.) salmon fillets
- 1 tsp. fresh lime juice
- Preheat oven to 450°F. In a small bowl combine curry powder, brown sugar, lime zest and red pepper flakes. Rub evenly over tops of fillets and place, seasoned side up, in a shallow baking dish.
- Bake 10 minutes or until fish flakes easily with a fork. Transfer fillets to a serving platter, drizzle with lime juice, and serve.
