Vegan Gnocchi with Tomato Cream Sauce

Ingredients
- 40 oz Vegan gnocchi
- 14.5 oz Canned tomatoes
- 1/3 cup Oat milk
- 1/4 cup Nutritional yeast
- 1/2 cup Red pepper, chopped
- 1/4-1/2 tsp Chili flakes
- 1/2 tsp Garlic powder
- Salt, to taste
- Pepper, to taste
- Fresh basil, optional
Instructions
- Cook gnocchi according to package instructions. Place cooked gnocchi in a skillet and set aside.
- Place the canned tomatoes, red pepper, oat milk, nutritional yeast, chili flakes and garlic powder in a blender and process until smooth. Add the sauce to the skillet with the gnocchi.
- Heat over medium heat until sauce comes to a gentle simmer and is warmed through.
- Top with basil and serve immediately.
