Parmesan Broccoli Crunch


  • 1 lb. fresh broccoli florets
  • 1 tbsp. extra virgin olive oil
  • 2 garlic cloves, finely minced
  • 1/3 cup panko breadcrumbs
  • 2 tsp. lemon zest
  • 1/4 cup finely grated Parmesan


  1. Preheat oven to 425°F. Line a large baking pan with foil. Place broccoli in baking pan and drizzle with oil. Season with pepper to taste. Roast 10 to 15 minutes or until tender and slightly browned.
  2. Meanwhile, coat a small nonstick skillet with nonstick cooking spray and place over medium heat. Add garlic; cook 30 seconds or until softened. Add panko; cook and stir 2 to 3 minutes or until lightly toasted. Remove skillet from heat and stir in lemon zest; set aside.
  3. Transfer broccoli to a serving platter. Top with panko mixture, sprinkle with Parmesan, and serve.
