Fettuccini AvoFredo

Ingredients

  • 2 Ripe avocados, mashed
  • 3 cloves Garlic
  • 2/3 cup Water
  • 2 tbsp Lemon juice
  • 1 cup Baby spinach
  • 2 tbsp Basil, chopped
  • 2 tbsp Grated Parmesan cheese
  • 1/4 tsp Salt
  • 1/2 tsp Black pepper
  • 4 oz Sundried tomatoes, thinly-sliced
  • 1 lb Whole wheat fettuccine, or pasta of choice

Instructions

  1. Place avocados, garlic, water, lemon juice, spinach, basil, cheese, salt and pepper into a food processor. Process until smooth.
  2. Cook pasta according to package directions. Drain pasta and place in a large serving bowl.
  3. Add the avocado sauce and sundried tomatoes to the hot pasta. Toss mixture until noodles are evenly coated.
