Fettuccini AvoFredo

Ingredients
- 2 Ripe avocados, mashed
- 3 cloves Garlic
- 2/3 cup Water
- 2 tbsp Lemon juice
- 1 cup Baby spinach
- 2 tbsp Basil, chopped
- 2 tbsp Grated Parmesan cheese
- 1/4 tsp Salt
- 1/2 tsp Black pepper
- 4 oz Sundried tomatoes, thinly-sliced
- 1 lb Whole wheat fettuccine, or pasta of choice
Instructions
- Place avocados, garlic, water, lemon juice, spinach, basil, cheese, salt and pepper into a food processor. Process until smooth.
- Cook pasta according to package directions. Drain pasta and place in a large serving bowl.
- Add the avocado sauce and sundried tomatoes to the hot pasta. Toss mixture until noodles are evenly coated.
