Couscous with Roasted Squash and Feta

Ingredients
- 1 tbsp Olive oil
- 1 lb Butternut squash, cubed
- 1 Red onion, chopped
- 2 cloves Garlic, minced
- Salt, to taste
- Pepper, to taste
- 2 oz Feta cheese
- 1 1/2 tbsp Pine nuts
- small bunch Basil, roughly chopped
- 1/2 cup Couscous, cooked
Instructions
- Preheat oven to 400F
- Place the squash, onion and garlic into a baking pan. Season with olive oil, salt and pepper and stir to coat.
- Roast for about 25 minutes, until vegetables are tender.
- In a dry frying pan, lightly toast the pine nuts until just starting to brown.
- Add the couscous, pine nuts, feta and basil to the squash and stir gently to combine.
- Serve immediately.
