Couscous with Roasted Squash and Feta

  • 1 tbsp Olive oil
  • 1 lb Butternut squash, cubed
  • 1 Red onion, chopped
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 2 oz Feta cheese
  • 1 1/2 tbsp Pine nuts
  • small bunch Basil, roughly chopped
  • 1/2 cup Couscous, cooked


  1. Preheat oven to 400F
  2. Place the squash, onion and garlic into a baking pan. Season with olive oil, salt and pepper and stir to coat.
  3. Roast for about 25 minutes, until vegetables are tender.
  4. In a dry frying pan, lightly toast the pine nuts until just starting to brown.
  5. Add the couscous, pine nuts, feta and basil to the squash and stir gently to combine.
  6. Serve immediately.
