Berry Panettone Trifle

  • 1 lb Panettone, crust removed and cut into 3cm cubes
  • 1/2 cup Tia Maria, or similar liqueur
  • 1 1/4 cups Bueberries
  • 1 cup Blackberries
  • 2 cups Raspberries
  • 8oz Cream cheese, room temperature
  • 2 cups Double thick vanilla pudding
  • 1/3 cup plus 1 tbsp Powdered sugar


  1. Combine panettone and liqueur in a bowl and let sit for 10 minutes.
  2. Stir together the powdered sugar and berries in another bowl and set aside.
  3. Beat room temperature cream cheese until smooth. Add the pudding and remaining powdered sugar and beat on high for 4-5 minutes, until smooth.
  4. To assemble trifle, arrange half the soaked panettone in the base of a 10-12 cup trifle bowl or large, deep bowl. Cover with half of the custard mixture. Sprinkle on half the berries. Repeat layering, finishing with fresh berries on top.
  5. Cover and refrigerate for 4-5 hours before serving.
