Instructions

Preheat the Oven & Prepare the Pan:

    1. Set your oven to 350F.
    2. Lightly grease a 9×13″ pan, then line it with parchment paper, leaving a bit of overhang on each side to make lifting out the brownies easier.

Chocolate Chip Cookie Layer:

    1. In a large mixing bowl, beat together the butter, brown sugar, and granulated sugar until well combined.
    2. Add the egg, egg yolk, and vanilla, mixing well after each addition.
    3. With the mixer on low, add the flour and salt, blending until just combined.
    4. Use a rubber spatula or wooden spoon to fold in the chocolate chips.
    5. Spread the cookie dough evenly into your prepared pan.

Oreo Layer:

    1. Arrange the Oreo cookies on top of the cookie dough, pressing each one down gently. Use half cookies where needed to fully cover the cookie dough.

Brownie Batter:

    1. Finely chop the chocolate and place it in a large, heatproof bowl with the butter. Microwave on medium power in 45-second intervals, stirring between each one.
    2. Let the melted mixture cool for about 5 minutes. Then, whisk in the eggs and granulated sugar.
    3. Sift together the flour, cocoa and salt to remove any lumps, then whisk into the batter until just combined.
    4. Drop spoonfuls of brownie batter over the Oreo layer to help spread it evenly, and then use a spatula to smooth the top.

Baking and Cooling:

    1. Bake the brownies for 37-45 minutes, or until a toothpick inserted comes out dry or with a few moist crumbs, depending on your preference for gooeyness.
    2. Allow the brownies to cool completely before cutting. Use the parchment paper overhang to lift the brownies out of the pan, then place on a cutting board to slice.

Decorating:

  1. Use the black writing icing to draw spines and other decorations on each brownie.
  2. Add a candy eye to each brownie.
