Ingredients
Chocolate Chip Cookie Layer- 3/4 cup Unsalted butter, softened
- 1/2 cup Brown sugar
- 1/2 cup White sugar
- 1 Large egg
- 1 Large egg yolk
- 1 tsp vanilla
- 1 1/2 cups All-purpose flour
- 1/4 tsp Salt
- 2/3 cups Chocolate chips
- 28 Oreo cookies
- 1/2 cup Unsalted butter, cubed
- 6 oz Dark chocolate, 50-70% or semi-sweet
- 1 cup Sugar
- 2 Large eggs
- 1/2 cup All-purpose flour
- 1/4 cup Cocoa powder
- 1/2 tsp Salt
- Black writing icing
- Candy eyeballs
Instructions
Preheat the Oven & Prepare the Pan:

- Set your oven to 350F.
- Lightly grease a 9×13″ pan, then line it with parchment paper, leaving a bit of overhang on each side to make lifting out the brownies easier.
Chocolate Chip Cookie Layer:

- In a large mixing bowl, beat together the butter, brown sugar, and granulated sugar until well combined.
- Add the egg, egg yolk, and vanilla, mixing well after each addition.
- With the mixer on low, add the flour and salt, blending until just combined.
- Use a rubber spatula or wooden spoon to fold in the chocolate chips.
- Spread the cookie dough evenly into your prepared pan.
Oreo Layer:

- Arrange the Oreo cookies on top of the cookie dough, pressing each one down gently. Use half cookies where needed to fully cover the cookie dough.
Brownie Batter:

- Finely chop the chocolate and place it in a large, heatproof bowl with the butter. Microwave on medium power in 45-second intervals, stirring between each one.
- Let the melted mixture cool for about 5 minutes. Then, whisk in the eggs and granulated sugar.
- Sift together the flour, cocoa and salt to remove any lumps, then whisk into the batter until just combined.
- Drop spoonfuls of brownie batter over the Oreo layer to help spread it evenly, and then use a spatula to smooth the top.
Baking and Cooling:

- Bake the brownies for 37-45 minutes, or until a toothpick inserted comes out dry or with a few moist crumbs, depending on your preference for gooeyness.
- Allow the brownies to cool completely before cutting. Use the parchment paper overhang to lift the brownies out of the pan, then place on a cutting board to slice.
Decorating:
- Use the black writing icing to draw spines and other decorations on each brownie.
- Add a candy eye to each brownie.
