Turkey Chili

Ingredients

  • 2 tsps Olive oil
  • 1 Yellow onion, chopped
  • 3 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 1 lb Extra lean ground turkey
  • 4 tbsp Chili powder
  • 2 tsps Ground cumin
  • 1 tsp Dried oregano
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Salt
  • 28 oz can Diced tomatoes
  • 1 1/4 cups Chicken broth
  • 2 (15 oz) cans Kidney beans, rinsed and drained
  • 15 oz can Sweet corn, rinsed and drained

Instructions

  1. Heat oil in a pot over medium-high heat.
  2. Add the onion, garlic and red pepper and sauté for 5-7 minutes, stirring frequently.
  3. Add in the ground turkey and cook until it’s cooked through, breaking it up as you go.
  4. Stir in the chili powder, cumin, oregano, cayenne pepper and salt.
  5. Add in the tomatoes, chicken broth, kidney beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until it starts to thicken.
  6. Serve with your favorite chili toppings.
