Vegetable Ramen Noodles

Ingredients

  • 1 Carrot, shaved
  • 1 head Bok choy, chopped
  • 1/2 cup Sugar snap peas, cut on the bias
  • 2 Scallions, thinly-sliced
  • Sesame oil
  • 1/4 cup Soy sauce
  • 2 tbsp Agave
  • Corn starch
  • 2 Ramen noodle cakes

Instructions

  1. Cook the ramen noodles according to package.
  2. Meanwhile, heat sesame oil in a pan and saute the carrots.
  3. Add the peas and continue sauteeing.
  4. Stir in the bok choy and cook until just starting to wilt.
  5. Add in the say sauce, agave, water and a sprinkle of corn starch and mix gently.
  6. Add the drained noodles to the pan and toss to coat evenly.
  7. Divide into two bowls and top with chopped scallions.
