Vegan Tomato Soup

Ingredients
- 1 Large head garlic, peeled
- 4 cups Canned tomatoes
- 1 Onion, quartered
- 1 bunch Basil
- 2-3 Chili peppers, deseeded
- Salt, to taste
- Pepper, to taste
- 2 tbsp, Olive oil
- 1/2 cup Coconut milk
- 1/2 cup Vegetable broth
Instructions
- Preheat oven to 480F.
- Place garlic, tomatoes, onion, basil, chili peppers, salt, pepper and olive oil in an oven-safe pot and cover.
- Cook in oven for 30 minutes.
- Add the coconut milk and broth, and blend until smooth.
- Serve warm.
