Vegan Tomato Soup

Ingredients

  • 1 Large head garlic, peeled
  • 4 cups Canned tomatoes⁣
  • 1 Onion, quartered
  • 1 bunch Basil
  • 2-3 Chili peppers, deseeded
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp, Olive oil
  • 1/2 cup Coconut milk
  • 1/2 cup Vegetable broth

Instructions

  1. Preheat oven to 480F.
  2. Place garlic, tomatoes, onion, basil, chili peppers, salt, pepper and olive oil in an oven-safe pot and cover.
  3. Cook in oven for 30 minutes.⁣
  4. Add the coconut milk and broth, and blend until smooth.
  5. Serve warm.
