Slow Cooker Ramen

Ingredients

Ramen
  • 1 lb Boneless skinless chicken breasts
  • 1/2 Yellow onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1/4 cup Soy sauce
  • 1/4 cup Seasoned rice vinegar
  • 1/2 cup Unsweetened soy milk
  • 4 oz Mushrooms, sliced
  • 1/2 tsp Ground ginger
  • 1/2 tsp Black pepper
  • 2 (3 oz) packets Ramen noodles
Suggested Toppings
  • Cooked shrimp
  • 4 Large eggs, soft boiled
  • Spinach
  • sesame oil
  • Sesame seeds
  • Crushed red peppers
  • Sliced carrots
  • Sliced scallions
  • Chopped cilantro

Instructions

  1. Grease your crockpot with oil or butter.
  2. Place chicken, onion, garlic, broth, soy sauce, vinegar, milk, mushrooms, ginger, and pepper in the slow cooker.
  3. Cook on low for 3 hours.
  4. Remove chicken from slow cooker and set aside.
  5. Turn slow cooker to high and add the ramen noodles. Cover and cook for 5 minutes, or until the noodles reach desired consistency.
  6. Slice the chicken into thing strips and add back to the broth.
  7. Spoon into bowls and add your toppings of choice.
