Roasted Chicken and Cauliflower

Ingredients

  • 2.5 lbs Chicken breasts
  • 1.5 heads Cauliflower, florets only
  • 4 tbsp Garlic, minced
  • 2 tbsp Parsley, chopped
  • 2 tbsp Dried oregano
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 4 tbsp Chicken stock
  • 2 Lemons, juiced

Instructions

  1. Combine garlic, parsley, oregano, stock, lemon juice, salt and pepper in a large bowl.
  2. Add cauliflower florets and chicken to the marinade, toss to coat and marinate in refrigerator for 1 – 4 hours.
  3. Preheat oven to 350F.
  4. Spread the chicken and cauliflower mixture on to a baking sheet and bake for 35 minutes.
