Roasted Chicken and Cauliflower

Ingredients
- 2.5 lbs Chicken breasts
- 1.5 heads Cauliflower, florets only
- 4 tbsp Garlic, minced
- 2 tbsp Parsley, chopped
- 2 tbsp Dried oregano
- 1 tsp Sea salt
- 1 tsp Black pepper
- 4 tbsp Chicken stock
- 2 Lemons, juiced
Instructions
- Combine garlic, parsley, oregano, stock, lemon juice, salt and pepper in a large bowl.
- Add cauliflower florets and chicken to the marinade, toss to coat and marinate in refrigerator for 1 – 4 hours.
- Preheat oven to 350F.
- Spread the chicken and cauliflower mixture on to a baking sheet and bake for 35 minutes.
