Peanut Butter Banana Muffins

Ingredients

  • 1 cup Mashed ripe bananas, about 3 bananas
  • 3/4 cup Creamy or crunchy peanut butter
  • 2 Large eggs
  • 1/4 cup Maple syrup
  • 2 tsp Vanilla
  • 1/2 tbsp Dairy free milk
  • 1 cup Gluten free oat flour
  • 1 tsp Baking powder
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1/3 cup Mini chocolate chips

Instructions

  1. Line a muffin tin with liners and spray the insides with cooking spray.
  2. Stir together the mashed bananas, peanut butter, eggs, maple syrup, vanilla and milk until smooth.
  3. Mix in the oat flour, baking powder, cinnamon and salt until smooth. Fold in the chocolate chips.
  4. Divide batter evenly into prepared muffin tin.
  5. Bake for 20-25 minutes, until a toothpick comes out clean.
  6. Remove muffins from the tin and let cool on a wire rack.
