PB & J Baked Oatmeal

Ingredients

Baked Oatmeal
  • 1/2 cup Rolled oats
  • 1/2 Banana, mashed
  • 1/2 cup Almond milk
  • 1 tsp Baking powder
  • 1 tbsp Flaxseed
  • 1/2 tbsp Peanut butter
Raspberry Chia Jam
  • 1 cup Raspberries
  • 2 tbsp Chia seeds
  • 1 tbsp Maple syrup

Instructions

  1. Preheat oven to 375F.
  2. Grease a ramekin or small baking dish.
  3. Place oatmeal ingredients in a blender and process until smooth.
  4. Pour mixture into prepared ramekin and bake for 22-25 minutes.
  5. Meanwhile, place raspberries in  a saucepan and cook over medium heat for 3 minutes, stirring occasionally. When the berries begin to soften, remove from heat and mash them into desired consistency. Stir in the chia seeds and maple syrup and set aside to allow it to thicken.
  6. Top baked oatmeal with more peanut butter and raspberry chia jam to taste.
