Panettone Shortcake

  • 1 Panettone loaf
  • 16 oz Heavy cream
  • 1/2 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 quart Fresh berries


  1. Slice panettone horizontally into 3 even layers and set aside.
  2. Whip the cream until soft peaks form. Add the sugar and vanilla and whip again until mixture just starts to stiffen.
  3. Place bottom panettone round on a serving platter. Spread on about 1/3 of the whipped cream. Add a layer with a third of the berries. Repeat layering with the remaining two panettone rounds, ending with berries on top.
