Honey-Roasted Pork Tenderloin

  • 1 1/4 lb Pork tenderloin, trimmed
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 3/4 lb Carrots
  • 2 Medium russet potatoes
  • 1/4 cup Honey
  • 3 tbsp Apple cider
  • 2 tsp Dijon mustard
  • 1 tsp Soy sauce


  1. Preheat oven to 425 F.
  2. Place the pork tenderloin on one side of a baking dish and season with the salt and pepper.
  3. Cube the carrots and potatoes so they are all an even thickness. Place vegetables on the other side of the baking pan.
  4. Make the glaze by whisking together the honey, apple cider vinegar, soy sauce and mustard in a bowl. Pour the glaze over the pork and vegetables and toss to coat.
  5. Bake for 22-25 minutes, until the pork is cooked through and the vegetables are soft.
  6. Let sit 5 minutes before slicing and serve warm.
