Grilled Sirloin with Tomatoes and Blue Cheese

Ingredients

  • 1/4 cup Olive oil
  • 2 tbs Balsamic vinegar
  • 2 cloves Garlic, crushed
  • 1 tsp Herbes De Provence
  • Salt, to taste
  • Pepper, to taste
  • 2 lbs Sirloin steak
  • 1 pint Cherry tomatoes
  • 2 tbs Olive oil
  • 2 cloves Garlic, minced
  • 2 tbs Blue Cheese, crumbled

Instructions

  1. Combine 1/4 cup oil, vinegar, crushed garlic, Herbes de Provence and salt and pepper in a large ziplock bag, add your steak. Marinate in the refrigerator for two hours.
  2. Preheat oven to 400F.
  3. Lay your tomatoes in a single layer on a foil-lined baking sheet. Drizzle olive oil over the tomatoes. Sprinkle minced garlic, salt and pepper over the olive oil. Roast in the oven for 20 minutes.
  4. While the tomatoes roast, grill steak on a preheated grill for 5-6 minutes per side, or until your desired doneness.
  5. Let steak rest for 10 minutes.
  6. Top steaks with roasted tomatoes and crumbled blue cheese.
