Grilled Sirloin with Tomatoes and Blue Cheese

Ingredients
- 1/4 cup Olive oil
- 2 tbs Balsamic vinegar
- 2 cloves Garlic, crushed
- 1 tsp Herbes De Provence
- Salt, to taste
- Pepper, to taste
- 2 lbs Sirloin steak
- 1 pint Cherry tomatoes
- 2 tbs Olive oil
- 2 cloves Garlic, minced
- 2 tbs Blue Cheese, crumbled
Instructions
- Combine 1/4 cup oil, vinegar, crushed garlic, Herbes de Provence and salt and pepper in a large ziplock bag, add your steak. Marinate in the refrigerator for two hours.
- Preheat oven to 400F.
- Lay your tomatoes in a single layer on a foil-lined baking sheet. Drizzle olive oil over the tomatoes. Sprinkle minced garlic, salt and pepper over the olive oil. Roast in the oven for 20 minutes.
- While the tomatoes roast, grill steak on a preheated grill for 5-6 minutes per side, or until your desired doneness.
- Let steak rest for 10 minutes.
- Top steaks with roasted tomatoes and crumbled blue cheese.
