Chicken Rustica

Ingredients

  • 1 package (6.6 ounces) Near East® Toasted Almond Pilaf Mix
  • 12 oz Boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 Medium red bell pepper, chopped
  • 1/2 tsp Ground cumin
  • 1/4 tsp Cayenne pepper
  • 2 tbsp Butter
  • 3 Medium onions, thinly sliced
  • 1 1/2 cups Frozen peas, thawed

Instructions

  1. Prepare rice pilaf according to package directions. When adding in the rice, also add in the chicken, bell pepper, cumin and cayenne pepper.
  2. Meanwhile, melt butter in a skillet over medium-low heat. Add onions and cook 15 – 20 minutes, or until onions are golden brown.
  3. Stir peas into cooked rice.
  4. Serve rice with cooked onions on top.
