Burrata with Tomato and Fig

Ingredients

  • 2 tbsp Olive oil
  • 1 Shallot, minced
  • 2 cloves Garlic, minced
  • 2 tsp Fresh thyme
  • 2 cups Cherry tomatoes, halved
  • 1/2 cup Dried figs, quartered
  • 1/2 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 1/4 cup Balsamic vinegar
  • 16 oz Burrata cheese
  • Fresh basil, coarsely chopped
  • 1 Baguette, sliced

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Saute the shallot for 4-5 minutes. Add the garlic and thyme, and saute for another minute.
  3. Add in the tomatoes, figs, salt and pepper, cover and saute for 10-12 minutes undisturbed.
  4. Stir in the balsamic vinegar, then stir, reduce heat to medium and continue to cook until excess liquid has cooked off, stirring occasionally.
  5. Remove the skillet from the heat and let rest for 8-10 minutes to cool slightly.
  6. Place burrata on a plate and spoon the tomato and fig mixture on top of it, then garnish chopped basil and kosher salt to taste.
  7. Serve with toasted baguette.
